Chocolate Peanut Bars

Peanut Chocolate bars
200g digestive biscuits (I sometimes use oatmeal cookies)
½ cup butter (I prefer unsalted)
1 cup peanut butter (whatever you prefer crunchy or creamy both work just fine) split ½ into a separate cup
1 bar cooking chocolate ( I prefer dark chocolate bars)
Blend biscuits in a blender/food processor until crumbs are formed almost glue like
Add melted butter and ½ cup peanut butter and mix well until you have a thick cookie textured mixture (hold well together)
Get a flat baking tray and grease lightly and line with parchment paper
Place mixture in tray and flatten
Melt chocolate over low heat (some people prefer in bowl of boiling water) and add a scoop of peanut butter to melted chocolate
In a separate container melt the rest of the peanut butter
Spread the chocolate peanut butter over your mixture in baking tray and smoothen
Add the melted peanut butter and swirl around with a knife or fork (bring out the artist in you: o)

Refrigerate for 1-2 hrs once nicely chilled let it sit at room temperature before serving

Cut into pieces and Voila… Enjoy

Quick Tip
You can freeze and serve with desserts at a later date as well as add to ice cream:o)

Tuna Patties

1 can of tuna (I use the one in sunflower oil, but in water is just fine)
Freshly chopped spring onions (you can also use regular onions instead, any type red or white doesn’t matter)
1/2 cup bread crumbs
Teaspoon lemon zest
1 eggs
2 large potatoes (optional)
Teaspoon fish sauce( any brand is fine)
Fresh chili( optional, I like abit of heat)
Salt and pepper to taste
Cooking oil( sunflower, peanut, coconut, olive whatever you have)
1. If you are suing tuna in water please DRAIN out the water. If you are using tuna in oil doesn’t matter but you can also drain out if you like. (I usually do not drain out the oil)
2 Mix all ingredients together
3. Form into patties (make a ball and then flatten)
4. Heat oil and fry lightly
These patties cook very fast so stay close to the stove and remove as soon as they are lightly brown (takes less than 5 minutes) once brown serve with you favourite sauce and Voila!!!
